Pandan, widely known as vanilla of the east, is a beloved natural flavouring and colouring agent employed to give off a pleasant aroma and added to various dishes ranging from fragrant coconut rice, traditional cakes, to sweet desserts and drinks in South East Asia. Pandan leaves contain important aroma compounds e.g. 2-Acetyl-1-Pyroline and other class of aroma compounds e.g. norisoprenoids and β-ionone that have a good potential effect for human health. Several antioxidant compounds e.g. flavonoids, phenolic compounds, vitamin E and ascorbic acid were also found and have been used as traditional medicine as well e.g. anti-inflamation.
